Six Flags Over Georgia is revamping parts of its dining for the 2025 season and has hired the park’s first-ever executive chef, Priscilla Hamilton. The first three restaurants to be redone are DeeJay’s Diner, Firehouse BBQ (formerly Daddy O’s BBQ) and Primo’s Pizzeria. These restaurants are introducing a new service style, prioritizing efficiency, quality, and the freshest ingredients for an elevated dining experience. The park is also updating and enhancing the interiors and exteriors with immersive and themed décor. During our experience on the 4th of July at Firehouse BBQ these upgrades were very obvious and our meal was simply delicious.

Firehouse BBQ is located in the old Daddy O’s BBQ building, but with a new menu and a new theme based on a firehouse. The restaurant fits perfectly in the USA section of the park and has great curb appeal with great views of Goliath and Dare Devil Dive. From the outside just walking by you can smell the wonderful aroma of the meats from the park’s in house smoker and your mouth will begin to water. You can easily see the service counter from outside the restaurant as the food service area has no seating, but there’s a large amount of outdoor seating as well as an adjacent indoor area that continues the firehouse theme.

The menu is pretty easy to navigate in that you choose between pulled pork, brisket, hand breaded chicken tenders or roasted chicken legs and then pick your sides. We had the brisket with mac & cheese and the chicken tenders with smashed potatoes and the platters come with cornbread. Everything is laid out in front of you and served from cast iron skillets, so you can see exactly what you’re going to get. There’s also dessert options of banana pudding and peach cobbler along with other BBQ staples as sides such as collard greens or baked beans.

The food definitely passes the eye test as the brisket had a nice crust on it and the smashed potatoes looked perfectly cooked. The flavor on the brisket was fantastic and it was incredibly tender, we savored every bite. The house BBQ sauce paired well with it and the brisket also has the fat cap on it which melts like butter in your mouth! The potatoes were also perfectly seasoned with a ton of flavor and the cornbread was moist, warm and full of flavor. Beauty is in the eye of the eye of the beholder with mac & cheese, but I appreciated that Firehouse BBQ’s version had huge spiral noodles with great cheese flavor and wasn’t bordering on a mushy cheese and noodle casserole like you sometimes see. The chicken tenders had about the perfect amount of breading and good seasoning that our 8 year old loved (and the boy eats a lot of chicken tenders).

One thing to be aware of is that portion size here is not over the top, but BBQ isn’t cheap anywhere these days, much less a theme park. If you sometimes share entrees it might be best for everyone to get their own here and perhaps get a few different things so everyone can try the different meat and side options. With regard to price, for two platters and two drinks we were at ~$45 after our 10% season pass discount, which for BBQ isn’t bad.
As mentioned previously, Firehouse BBQ isn’t the only location in the park that’s been enhanced for 2025. Below is a summary of all the changes this year in the Six Flags Over Georgia dining program. The website also has a great interview with Chef Priscilla Hamilton. I actually had a chance to meet her on media day for Georgia Gold Rusher and she’s super personable and passionate about the food she’s helping create.
- DeeJay’s Diner – This classic 1950’s-style diner gets a sleek, modern update, featuring a menu with hand-breaded chicken tenders, juicy cheeseburgers on brioche buns, and creamy house-made mac and cheese.
- Firehouse BBQ – Formerly Daddy O’s BBQ, the new Firehouse BBQ draws inspiration from a small-town firehouse, serving up southern favorites like slow-roasted brisket, pulled pork, collard greens, and golden smashed potatoes.
- Promenade Primo’s Pizzeria – The beloved pizzeria has a new fresh, charming design and a menu upgrade, including thicker-crust pizzas, chicken pesto sandwiches on focaccia, and sausage piadina flatbreads inspired by Italian street food.

The food at Firehouse BBQ was stunningly good. The only complaint I had was that I wanted more! I need to get back ASAP to try the pulled pork, some of the other sides and especially the desserts. I also can’t wait to try the other two restaurants that were redone for 2025 to see if the enhancements there are at the same high level as Firehouse BBQ. Between Firehouse BBQ and the Along the Rails Tavern opening last year there are now two options that far exceed your stereotypical theme park food and beverage options. Hopefully this is a sign of what is to come in subsequent years with enhancements to other dining locations. Passholders can also use the new Pass Perks program to save money at Firehouse BBQ with park visits in July potentially earning you up to a 20% food discount. If you’re looking for a good meal at Six Flags Over Georgia be sure to give Firehouse BBQ a try.
